The first time I tasted churros was at The Cross in a beautiful old-fashioned coffee shop. The shop had all paintings hanging up, a huge coffee machine where you could grind your own coffee beans and all old fashioned orniments in a cabinet. They were the most scrumptious yummies I had ever tasted. This was the 2nd recipe I found to try and make them and I found this one to be easier and yummiest.

- 125g butter, chopped
- 250ml water
- 150g plain flour, sifted
- 3 eggs
- Vegetable oil, to deep-fry
- 65g caster sugar
- 1 ½ tspn ground cinnamon
1. Place your butter and water in a saucepan over low heat.
3. Add flour and stir until well combined and mixture comes away from the sides of the pan.
4. Put the mixture in a bowl and allow to cool slightly before adding the eggs, one at a time and beating well between each addition, until mixture is smooth.
5. Spoon into a piping bag fitted with a star nozzle.
6. Heat enough oil in a deep frying pan to reach a level of about 4-5cm.
7. Pipe 10cm lengths of the dough directly into the hot oil, using a knife to cut lengths; don't try to do too many at once. Cook for 1 minute each side, then drain on paper towel.
8. Immediately place churros on a tray containing the combined sugar and cinnamon and toss gently to coat.
