I absolutely love this dish! It reminds me of a Laksa.

- 125g thin egg noodles
- 1 tablespoon oil
- 3 french shallots, finely chopped
- 1 1/2 cloves garlic
- 1/2 red chilli, seeded and chopped
- 1/2 - 1 tablespoon red curry paste
- 187g chicken strips
- 1 tablespoon fish sauce
- 1/2 tablespoon palm sugar
- 1 1/2 cups coconut milk
- 1/2 tablespoon lime juice
- 1/2 cup chicken stock
1. Prepare the egg noodles according to the packet.
2. Heat the oil and cook the shallots, garlic and chilli for 1-2 minutes.
3. Add the curry paste and cook for 2 minutes or until fragrant. Add the chicken and cook.
4. Add the fish sauce, sugar, lime juice, coconut milk and chicken stock, simmer for 5 minutes without boiling.
5. Serve over prepared noodles.
